Murchie's Ice Cream Christmas Cake

This is the easiest dessert recipe EVER! We all adore our Murchie’s Christmas Cake studded with festive fruit and almonds but if you’re looking for something a little different and happen to have a few slices leftover then this recipe is for you. Just make sure to order your Christmas Cake and Decadent Pecans, and that you have plenty of room in the freezer for ice cream.
Murchie's Ice Cream Christmas Cake
with Decadent Pecans
Ingredients:
- A few slices of Murchie’s Christmas Cake
- Vanilla Ice Cream
- Decadent Pecans
If you'd like to elevate the dessert:
- Orange zestÂ
- Murchie’s Chai Spice Blend
- Golden syrup
Directions:
Crumble the leftover Christmas Cake into a bowl.
Scoop about 4 big scoops of slightly softened vanilla ice cream into the bowl (approximately equal parts crumbled cake and ice cream).
Working fairly quickly, stir together the ice cream and cake crumbles until evenly combined.
Scoop into a container and place in the freezer for a couple of hours or overnight.
When ready to serve, roughly chop some Decadent Pecans for sprinkling on top.
*Elevated version:
Pour a cup of golden syrup into a small pot and add a couple of tablespoons of Chai Spice.
Bring to a boil and simmer for a few minutes.
Strain into a small jug.
Pour on top of ice cream with orange zest and chopped Decadent Pecans.
