This delicate green tea comes from the Lake Tai region of Jiangsu province, and is picked in early spring. Only one flush is picked, and the leaves are very quickly withered for 3-4 hours, before they're fired and finished within a day. The result is extremely fresh, its grassy and light vegetable notes reminiscent of spring mornings. Crisp, sweet, with a slightly creamy finish.
These large leaves can be further infused a second or third time, extending the steep-time accordingly. And for a cold brew, try adding loose tea to cool water and refrigerating for up to 5 hours. The result is light and refreshing!
